Italy

From the number of recipes in this Section, it's not hard to conclude that we eat Italian food a lot.

If you don't make your own pizza crust because your think it's too difficult or you haven't found a recipe that works for you, you should try the Pizza Dough recipe that I've develped.  It's based on Fine Food's research that concluded that rising over several days in the fridge creates a better crust, which I've found to be true.

Highlights

Black Olive PizzaThere are many recipes that I could point out as exceptional, but I'll stop at just a couple:

Pizza: don't overlook a very simple one, the Black Olive Pizza.  If we are having guests for a special Italian meal, I'll sometimes use this one as an appetizer.  It's surprisingly good.

Goat Cheese RavioliPasta: It's a toss-up between Ian's Shrimp Scampi Spaghettini, Bolognese Lasagna, and Tagliatelle al Limone, unless you are up to making your own pasta, in which case the Mushroom, Proscuitto, and Boursin Ravioli with Tomato Sauce are heavenly.

Video

This video shows how I make ravioli, one of my favourite Italian dishes.  Detailed instructions are included under "Pasta".
