Caribbean

Every once in a while, we come across a Jamacain or other Caribbean recipe that is quite delightful.  Jerked meat, for example.

Highlights

The only thing that I don't like about Jerk Pork is that it doesn't go very well with wine.  When we have it, we drink beer, usually Red Stripe, a Jamaican beer. 

The Jerk Pork Tenderloin recipe in this Section is spicy, complex, and great tasting with a nice crunchy BBQ'd texture.  It could easily be made with chicken as well.
